Buy fat to render for a variety of uses, including cooking lard and soap making! Pasture raised pig fat is the second highest natural source of vitamin D (after cod liver oil). It is a healthy cooking alternative to seed oils because it does not contain or create trans fats. "Back fat" is more plentiful on a pig and is the source of basic lard. Pigs don't have as much "leaf fat", and leaf fat is the source of the prized leaf lard used for flakey pastries and pie crusts. If you have never rendered fat before, it's easy! Put the fat in a large roasting pan in the oven at 300F. Bake it for about 6 hours if it is thawed, or 8 hours if it is still frozen. Next remove it from the oven and use a ladle to dip the hot liquid fat into canning jars. Place two piece lids on each. There will probably still be some fat in the crispy pieces. To extract it, use a potato masher to mash them down and put it back in the oven for another half hour. When you ladle out this last fat, you will want to pour it through a sieve to remove bits of cracklins. Store jars of lard in the freezer until you are ready to use them, and in the fridge once opened. (If you cut the pieces of fat into smaller pieces before baking, it will take less time than the 6 or 8 hours.)
